Turkey Day Success!

This Thanksgiving Josh and I embarked on our first turkey roasting adventure. I was kinda nervous and really didn’t want to mess it up! The company I work for gave me a HUGE turkey… 21lbs! Luckily, a coworker of mine gave me a pretty fool proof recipe that caused me to chill out about it.

  1. Take out all the stuff (neck and giblet bag) and rinse the turkey inside and out
  2. Separate the skin from the meat gently without breaking the skin
  3. Palace approx 3/4 a stick of butter (sliced and coated in poultry seasoning) in a checker pattern in between the skin and meat
  4. Rub a little melted butter on the outside
  5. Sprinkle chopped fresh rosemary and sage all over the skin
  6.  Stuff the turkey (fresh rosemary and sage sprigs, quartered onion, and some celery)
  7. Place chicken stock in bottom of the roasting pan
  8. Cover with foil
  9. Baste every hour
  10. The last 45 min take the foil off and baste every 15 min

We also put a cup with water in the oven to add to the moisture. It took our 21lb turkey 7 hours to cook! It couldn’t have turned out better! Very MOIST (Josh’s least favorite word) and flavorful! Hope everyone had an awesome turkey day and an awesome turkey!
